How to: Delicious Raspberry Chocolate Brownies



Quite simply, I love baking. I love experimenting with new flavours and ingredients and adding a twist to basic recipes. Sometimes adventurous, sometimes not. Sometimes it works out, sometimes it doesn't. But hey, that's the fun in it! Follow the recipe below to make some of these gorgeous Raspberry Chocolate Brownies! You can choose to include chopped walnuts in the mix but as I'm allergic, I obviously leave these out.

Here's what you'll need:
  • 100 g margarine
  • 1 medium bar of milk chocolate
  • 175 g dark soft brown sugar
  • 2 medium eggs
  • 100 g self raising flour
  • 150 g fresh raspberries
  • pinch of salt
  • half teaspoon vanilla essence

  1. First things first, heat the oven to 180 degrees centigrade (Gas Mark 4) and grease a 28 x 18cm tin.
  2. Melt the margarine and half the chocolate bar together and leave to cool.
  3. Stir in the sugar and add the eggs (beaten), also adding the vanilla essence.
  4. Mix in the flour and salt.
  5. Cut each raspberry in half and add to the mixture.
  6. Roughly cut the remainder of the chocolate bar into smaller chunks and add to the mixture.
  7. Stir everything together then pour the mixture into the tin.
  8. Bake for about 25-30 mins.
  9. Leave in the tin until cold before cutting.



This will serve about 12 people once cut into squares.
